I love growing zucchini in my back yard. One plant can yield so much fruits, plus you get extra bonus of all the blossoms. Yes, they are edible. In this video I stuffed it with Manchego and Boursin cheese. But really the stuffing is up to your imagination. You can stuff it with whatever you like, perhaps like ricotta cheese or shrimps, scallops... Then I fried it in a light airy batter, making it super crunchy on the outside, soft, and cheesy stuffing in the middle. The best of both world. The bell peppers coulis are perfect to accompany the crunchy, rich, cheesy stuffed blossoms. Here are the ingredients you will need:

FOR THE STUFFING:

1 cup diced bread
1/2 cup Manchego cheese, grated
2 tablespoons Boursin cheese
2 garlic cloves
3 tablespoons heavy cream
1/2 teaspoons salt
1/2 teaspoons black pepper
1/4 teaspoon cayenne pepper
2 tablespoons chives, chopped

FOR THE BATTER:
1 egg yolk
1 cup sparkling water, cold
1/2 cup plus 6 tablespoons rice flour
1/2 cup potato starch

FOR THE BELL PEPPERS COULIS:

3 orange or yellow bell peppers, medium size
2 tablespoons olive oil
1 tablespoon shallot, chopped
1-2 sprigs fresh thyme
1 tablespoon sherry vinegar
1/4 teaspoon black pepper
1/2 teaspoon salt
1/4 cup chicken stock

OTHERS:

oil to fry the blossoms
edible flowers for garnish
